Turning dinner into breakfast

Postby twistedtentpeg on Tue May 05, 2009 3:30 pm

As those of you with 'campfire cooking stoop' after your last camping trip will understand... a dinner that can easily turn its self into breakfast is a definite bonus.
Heres one we came up with at Debden House over the bank holiday.
Dinner:
Chilli and baked potatoes - Tasty campfire treat, topped with loads of grated cheese. YUM!
I'm assuming most people can whip up a chilli and throw a few spuds in the fire, but let me know if not and I'll post the recipe ;)

Had a bit of leftover chilli, which is when I had the brainwave of Huevo's Ranchero's for breakfast.

Basically, added a tin of baked beans to the chilli. Cook on stove bbq or fire in large frying pan until hot. Remove from heat.
Make a well in the mixture and fill the space with an egg. repeat until each person has an egg each. Cover with lid or plate or whatever is available and return to heat. In about 5 minutes the eggs will be cooked and its ready to serve.
COVER in grated cheese and served with fire grilled bacon!!

So, anyone else out there got hot tip for turning dinner into breakfast??
