BBQ king prawn fajitas in a simple dish ready to eat in 10 minutes.

What you need:
1 x Pack of cooked peeled king prawns available at any supermarket (normally on offer)
Half a cucumber
1 x Box of cherry tomatoes
1 x block of cheese (alternatively buy already grated)
1 x BBQ sauce i.e reggae reggae, newmans sticky BBQ marinade (delicious)
1 x Mayonnaise/sour cream/tomato salsa
1 x iceberg lettuce
1 x Pack of cooked tortillas
Utensils needed:
1 x Frying pan or if cooking on a BBQ use foil trays like these

1 x Grater for cheese
1 x Sharp knife
How to: preparation
First Cut the cumber in half, then cut both halves in half again and then cut in to wedges one you have cut to your desired size place on large serving plate. Then cut the tomatoes in half and place them next to cucumbers,next cut your lettuce in half then in half again and slice to desired thickness and place on plate with cucumbers and tomatoes. Finally grate cheese and place in serving bowl or leave on chopping board.
Simply put the cooked peeled prawns in the foil tray (no need to add any oil or butter as the moisture from the prawns will be sufficient as long as you keep moving them around the tray), after around 3 minutes add the BBQ sauce, keep stirring so not to burn the sauce, gently stir the prawns and leave for a minute to cook. Once the sauce and the prawns have infused your ready to serve.
Alternative to foil tray: if you cannot get the trays without holes in them, marinade the prawns before cooking.
How to: Eat
Take your fajita and spread the desired amount of mayonnaise over the whole area next add the shredded iceberg lettuce, and desired amount of cucumber, making sure you have room for the prawns and other ingredients,add a few king prawns and sauce, top with tomatoes and cheese. Fold the fajita in half then fold the bottom up to make sure none of the ingredients spill out when you eat it and your ready to dine.
*Alternative to prawns: chicken/turkey pieces/chopped/diced chicken breast- cooking time will vary on size of piece.

The reasons why I picked this dish is because its simple,effective and if you have children they will love it because its fun to pick your own food and make your own fajita[s] Also you can cook this dish by using any BBQ no matter what size. Lastly if your like us and use a fridge when you have EHU or if you have cool bags you will know that its not always possible to get everything in them due to their size. This dish is made with the selected ingredients that are guaranteed to fit in to your cool box and/or fridge.
